Bottarga is a delicacy of salted cured roe of tuna that has been fished in the local Sicilian waters. Bottarga, also known as "Mediterranean caviar" is an ancient ingredient belonging to the Mediterranean coastline and strongly associated with Italian cooking, particularly in Sicily.
